Recipe For Flat Akara With Beans Flour [#Pankara or #Moinmoinlette]

Idea from #moinmoinlette @dooneyskitchen or Pankara by +9jafoodie. I've been following both food bloggers above on social media and their adventures in the kitchen keep reminding me of my homec practicals days, yes I did home economics in secondary school, up to SS3. In my school I took the elective called Food and Nutrition in which I scored A1 in WAEC! LOL...

Anyways, with getting older and trying to keep down my weight and remain healthy, I hardly eat akara though it's something I used to love. So I liked the idea of getting an Akara taste without the deep fried oil. In this recipe, the finished texture and taste was between akara and moin-moin. It had depth so I covered it with foil to get the insides cooked through. I also added onions and tomatoes but no other vegs. See all ingredients and process below...

Someone asked why I used frozen spinach in my last gizzard sauce. Anyone who's been paying attention to these food recipes would have recognized that I'm what some people may describe as a convenience cook. My mum laughs at me and calls me mademoiselle in the kitchen because I don't like to get dirty. Yes, I cook with an apron most times. More importantly, I like all the ingredients I cook with to be almost ready.

I posted a picture of this beans and plantain in Instagram as one of the best dinners I've ever had. It was that good. Atala cooked the beans, I made the plantain, but as you can guess, the beans was the best part of the meal. I had to pry that secret recipe from Atala.

Menu Ideas - Boiled Potatoes and Chili Beans

One of my favorite foods is yam but it is so hard to get them here, either they're not available at all, or they are too expensive. I do get them once in a while, but for the rest of the time, I make do with potatoes, either sweet potatoes or the local ones we have here.

On this occasion, I had some chili beans left over but it wouldn't do for a meal for both of us, so I quickly boiled up some potatoes, and then mixed them together. Reminded me of our Yam and Beans back in boarding school. Loved it.

How to Make Moi-Moi and Corned Beef - Eat with Pap

Moi-Moi is one of those meals I forget to cook because I think of it in my head as too difficult to prepare. This is because when growing up, and for a long time after that, we used fresh beans and had to clean it by hand before making moi-moi. When I tried that here the first time, it broke my blender, and since then, my wariness of moi-moi increased. I do cook it once in while a with bean flour, but either the taste doesn't come out the way I want it, or the texture is off.

My mom reminded me of the meal during her last visit, and at our visit to the African store, I bought a pack of the ground bean flour. This one had a recipe and method of preparation on the label and turned out to be the best moi-moi I had prepared in years. I've since bought several packs more of the same kind and moi-moi has more regularly been on the menu.
